Buttermilk-Cinnamon Coffee Cake

Coffee cake may be a delectably sweet treat, but many of the ingredients: buttermilk, nuts, cinammon and ginger pack significant health benefits.

This coffee cake is not only mouth-watering and delicious, but the key ingredients, cinnamon (an anti-inflammatory) and ginger (helps the immune system), give this treat a nutritious boost.

INGREDIENTS

2 1/4 cups white flour
1/2 teaspoon salt
2 teaspoons cinnamon
1/4 teaspoon powdered ginger
1 cup firmly packed brown sugar
3/4 cup white sugar
3/4 cup canola oil
1 cup chopped walnuts or pecans
1 teaspoon baking soda
1 teaspoon baking powder
1 large egg, beaten
1 cup buttermilk

PREPARATION

1. Preheat oven to 350 degrees. 

2. In bowl, mix flour, salt, 1 teaspoon cinnamon, ginger, both sugars, oil. Remove 3/4 cup of mixture; add nuts and 1 teaspoon cinnamon to it. Mix well; set aside to use as topping.

3. To remaining batter add baking soda, baking powder, egg, buttermilk. Mix. Small lumps are fine. 

4. Pour batter into well-greased 9-by-13-by 2-inch pan. Sprinkle topping evenly over surface. Bake 40 to 45 minutes.
